BOOKING CONDITIONS
Bookings are considered final once payment is made. If you need to cancel, at least 7 days notice is required in order for a refund.  For any cancellations made within 7 days of the workshop date, you will forfeit your fee unless the place can be filled from a waiting list.  If you would like to transfer to another workshop, it must be done with at least 7 days’ notice before the start of the workshop.

CANCELLATIONS
If there are insufficient numbers for a class it may be cancelled or postponed. In this case, you will be notified as soon as possible and given the option of a full refund or a transfer to a class of equivalent value.

CHEESE MAKING

Blue Vein, Triple Cream Brie, Swiss Style and Cheddar

Join our Workshops and take the mystery out of making cheese. No prior knowledge is required and all ingredients are provided.  Each month we choose a different Artisan Cheese to make. Please check the schedule for more information. You will be working in groups and make your own Artisan cheese and Gourmet Style Feta along with demonstrations for making Yoghurt and Ricotta. Class notes will be provided.

The workshops are 100% hands on, fun and interactive. Everything is provided.

The equipment used to make your own cheese is as simple as the process itself.  The ancient art of cheese making is now a process that can be replicated in your own kitchen.

Making your own cheese is sustainable, it cuts down on food miles, its preservative free, rewarding, and cost effective and the bragging rights are huge! Join one of our workshops and discover how easy home Cheese making really is!

What You Will Learn

  • The day includes pre course coffee & tea and morning tea, along with lunch, cheese and homemade preserve tastings, but most importantly, knowledge and skills required for home cheese making!  Please
    advise of any dietary requirements.

    In addition to this, the milk, other ingredients (to make the cheese) and a hoop to take home with your cheese are included. You are encouraged to bring a water bottle and a Camera.   All participants leave
    immensely satisfied with great knowledge and know how, cheese making recipes, class notes and the cheese they produced to share with family, friends and colleagues!!

    What to bring “Your Enthusiasm”
    For safely transporting the fine cheese you will be making and taking home, you will need to bring with you an esky/cooler bag and freezer bricks along with the following:-

    • Item 1. 1 x 2 litre ice-cream container with lid, or similar sized container.  This will be used to take your cheese home in at the end of the day.
    • Item 2. 1 x clean 1 litre container, with a wide neck and sealable lid.  A glass jar or a plastic. Tupperware container will do. Your Gourmet feta will be made in this container.

    What to wear– The dress for the day is “comfortable”.    For hygiene purposes it is compulsory for all participants to wear a clean overcoat or apron and head covering such as a clean hair net, cap or bandanna.  We supply you with an apron and hair net.    Your shoes should also be clean, fully enclosedand suitable for working in a commercial kitchen.  For hygiene purposes you will be asked to remove unnecessary rings and jewelry around the wrist and fingers before you make cheese.

SOFT CHEESE MAKING

Camembert and Ricotta

You will be working in groups and make your own Camembert cheese and Gourmet Style Feta along with demonstrations for making of Yoghurt and Ricotta. Class notes will be provided.

1 HOUR FRESH CHEESES

Learn how to make your own fresh Yoghurt, Labne, Quark and Fetta in this simple and fun 1 hour cheese making workshop! This workshop is designed to take the mystery out of cheese making and break it down into something so simple, you will be able to reproduce in your own kitchen. You don’t need any special equipment, the method and technique are as simple as the ingredients themselves.

THE WORKSHOP WILL RUN FROM 11am to 12pm $45pp – Need 4 participants to proceed with class.

PRESERVING

Join our Workshops and take the mystery out of Preserving. The day includes pre course coffee & tea and morning tea, along with homemade preserve tastings, but most importantly, knowledge and skills required for home Preserving!  No prior knowledge is required and all ingredients are provided.   Class notes will be provided. Please advise of any dietary requirements.

SAUSAGE, SALAMI & SMOKING WORKSHOPS

Homestead Sausage and Salami Making

If you’ve ever had fresh handmade sausage with quality meat fresh herbs and spices, you know there is no substitute. Making fresh salami and sausage in your home kitchen is fun and the results are worth the effort. Our classes have both a North American and European influence.

You will learn the techniques for mixing and stuffing and how to use the equipment, flavourings and recipes as well as the health and safety aspects of homemade cured meats before we share tips for grilling and barbecuing.

This is a DEMONSTRATION class with opportunities for hands-on participation.

Homestead American Style Smoking

Wood smoking is a natural way of preserving meat that has been used for generations. In this workshop, you will learn about different types of smokers and some techniques that you can apply at home without specialised equipment. The class room discussion will touch on different types and cuts of meats, brines and marinated, dry rubs and smoking woods. You will have the opportunity to see different meat and produce at different stages of the smoking process, both Hot and Cold smoking.

This is a DEMONSTRATION class with opportunities for hands-on participation.
